We start preparing this delicious recipe with an essential step: sautéing the onion and garlic. Choose a deep pan and place it over medium heat. Add a few tablespoons of olive oil, which will give a pleasant taste to the dish. When the oil is well heated, add the finely chopped onion and crushed or finely chopped garlic. Stir constantly for a few minutes until the onion becomes transparent and slightly golden, and the aroma of garlic begins to fill the kitchen.

Once the onion and garlic are sautéed, it’s time to add the pumpkin. Make sure it is peeled and seeded, then cut it into cubes of about 2-3 cm. Add the pumpkin to the pan and mix well to combine the flavors. Continue to sauté for a few minutes until the pumpkin starts to release its juice and soften slightly.

After the pumpkin has sautéed a bit, add enough water to cover the ingredients. Sprinkle salt and pepper to taste, then add fresh basil leaves, which will add extra flavor to the dish. Cover the pan with a lid and let everything simmer on low heat. The pumpkin will become soft and absorb the flavors developing in the pan, while the water will gradually reduce, transforming everything into a delicious composition.

In the meantime, prepare the pasta. Boil a large pot of salted water and add your favorite pasta. You can opt for spaghetti, penne, or fusilli, depending on your preferences. Cook the pasta according to the package instructions, being careful not to overcook it, so it remains al dente. Once the pasta is cooked, drain it well in a colander and add a tablespoon of olive oil over it, gently mixing to prevent sticking.

After the pumpkin is well cooked and the water has evaporated, remove the pan from the heat and lightly mash the pumpkin with a fork or a blender, leaving some larger pieces for texture. Add the cooked pasta to the pan and mix everything well so that the pasta is evenly coated with the pumpkin sauce. Serve the dish warm, garnished with fresh basil leaves and, if desired, grated parmesan on top for an even more intense flavor. Enjoy your meal!
