- 3 large eggs

Step 1: Preparing the ingredients
Start by washing the oranges well. Use a fine grater to grate the zest of the three oranges, being careful not to include the bitter white part. Then, squeeze the juice from the oranges, ensuring you get about 200 ml of fresh juice.
Step 2: Creating the double boiler
Fill a pot with water and bring it to a simmer over medium heat. It is important to use an indirect cooking method to prevent the eggs from curdling. Choose a stainless steel or glass bowl that fits over the pot without touching the water.
Step 3: Mixing the ingredients
In the bowl above, add the grated orange zest, orange juice, sugar, eggs, and a pinch of salt. Use a whisk to mix the ingredients well until the mixture becomes smooth.
Step 4: Cooking the jelly
Place the bowl over the double boiler, making sure the water is gently simmering. Continue to whisk the mixture constantly for about 10-15 minutes, until it thickens and becomes creamy. It is essential not to let the mixture boil vigorously, as the eggs may curdle.
Step 5: Adding the butter
When the jelly has reached the desired consistency, remove the bowl from the heat and add the diced butter. Stir until the butter is completely melted and incorporated into the mixture. If desired, now is the time to add the vanilla extract or orange liqueur for an extra flavor boost.

Transfer the orange jelly to a sterilized jar, seal it tightly, and let it cool to room temperature. Then, store it in the refrigerator, where it will keep for about 2 weeks.
