Step by Step: Preparing the Tennis Racket Cake
1. Preparing the base:
Start by preheating the oven to 180°C. In a large bowl, beat the eggs with the sugar until the mixture becomes fluffy and light in color. Add the oil and milk, mixing well. In another bowl, combine the flour, cocoa, baking powder, and salt. Incorporate the dry ingredients into the wet mixture, gently mixing with a spatula to avoid lumps.
2. Baking the base:
Pour the obtained mixture into a baking tray lined with parchment paper and bake for about 30 minutes, or until a toothpick inserted in the center comes out clean. Allow the base to cool completely on a rack.
3. Preparing the whipped cream:
In a separate bowl, whip the cream with the 450 ml of milk. Add the 3 packets of stabilizer, honey, and vanilla essence. Continue mixing until you achieve a firm whipped cream. Place the whipped cream in the refrigerator until the cake assembly.
4. Preparing the glaze:
Grate the chocolate and place it in a saucepan over a double boiler. Once the chocolate begins to melt, add the oil and water, stirring continuously. Finally, incorporate the butter until it melts completely. Allow the glaze to cool slightly.
5. Preparing the fondant:
In a saucepan, place the water with the gelatin and let it melt over a double boiler. Add the butter and honey, mixing well. Divide the mixture into two bowls: in one, add blue food coloring (2-3 drops) and in the other, combine blue with yellow to obtain green. Mix each bowl until you achieve the desired colors.
6. Forming the fondant:
In 3 bowls, place 150 g of powdered sugar each. In the middle, make a well and add each colored mixture, mixing until the sugar is completely incorporated. Gradually add the remaining sugar (50 g per bowl) and mix until you obtain a fondant. Let it rest in the refrigerator for 30 minutes.
7. Assembling the cake:
From the cake base, cut 2 layers for the base of the cake, keeping 1 layer for the racket handles. Use a sheet to cut out the shape of the racket and use it as a template. Place the first layer of the base, add a layer of whipped cream, then half of the glaze. Continue with the second layer of the base, the remaining glaze, and another layer of whipped cream. Smooth the surface well.
8. Decorating the cake:
Use the colored fondant to create the tennis racket. You can use colored whipped cream in red for the edges of the racket. Be creative and personalize the cake as you wish!
