Farfalle with sausages in tomato sauce
To prepare a delicious and comforting meal, we start by putting water and salt in a pot, which we bring to a boil over medium heat. It is important to ensure that the water is boiling well before adding the pasta, so that it cooks evenly. Once the water starts to boil, we add the pasta and let it cook according to the time specified on the package, usually between 8 and 12 minutes, depending on the type of pasta used. After the pasta is cooked al dente, we remove it from heat, cover the pot with a lid, and let it rest for a few minutes to absorb the flavors.
In the meantime, we prepare the sauce. We take some quality sausages and slice them thinly. In a large skillet, we add two tablespoons of oil, and once it is heated, we add the sausage slices. We fry them over medium heat, stirring frequently, until they become browned and crispy. Their aroma will infuse the oil, creating a tasty base for the sauce.
Once the sausages are ready, we add tomato paste, which will give a rich flavor and vibrant color to the dish. We peel a few garlic cloves, wash them, and slice them finely before adding them to the skillet. The garlic will bring an intense aromatic note that perfectly complements the sausages. Then, we sprinkle sweet paprika, which will not only add a warm color tone but also a slightly smoky flavor.

When the pasta has rested for a few minutes under the lid, we rinse it with cold water to stop the cooking process and make it less sticky. We drain it well in a colander and prepare it for serving. In a large serving dish, we pour the pasta and generously cover it with the warm sauce, gently mixing to ensure that each piece of pasta is well coated.
For an extra flavor boost, we can sprinkle grated parmesan or feta cheese on top, adding a creamy and salty note. It can be garnished with fresh basil or parsley leaves for a pleasant appearance and an even more intense aroma. This dish is ideal for a family dinner or to impress friends at a festive meal.
