Swirled Cakes
I wanted to make muffins, but since I didn't have all the necessary ingredients, I decided to adapt and create some delicious little cakes in muffin shapes! This is a simple recipe, but full of flavor, that can quickly become the favorite of the whole family.
We start by separating the egg whites from the yolks. The egg whites are beaten with sugar until we obtain a fluffy and glossy mixture. It is essential to use a clean and dry bowl to achieve a stable foam. Once the egg whites are properly beaten, we add the yolks one by one, mixing gently so that the air remains in the mixture. Next comes the oil, which will provide a moist and flavorful texture, and then the baking powder dissolved in hot water, which will help the little cakes rise.
Don't forget your favorite flavor, which can be vanilla or lemon, depending on your tastes. Finally, we add the flour, sifted to avoid lumps, and mix from bottom to top with a spatula or wooden spoon to keep the air in the mixture.
After we have obtained a homogeneous paste, it's time to deal with the muffin molds. We fill each mold using a spoon, leaving room for them to puff up. Then, we 'throw' them into the preheated oven at 180 degrees Celsius and let them bake for about 15 minutes until they become golden and fluffy.
In the meantime, we prepare a delicious chocolate sauce. In a saucepan, we put the eggs, water, and sugar and mix vigorously with a whisk over a steam bath. This step can be a bit tiring, but it's worth the effort, as we will obtain a smooth and velvety cream. We continue to mix for 15 minutes, alternating arms to avoid tiring one bicep too much!
Once the cream is ready, we take the saucepan off the heat and quickly add the butter and cocoa. We mix well until everything is completely integrated and we achieve a creamy texture. This sauce will be perfect for drizzling over our little cakes, adding an extra burst of flavor.
Yay!!! Now all we have to do is wait for the little cakes to cool down a bit, then we can decorate them with the chocolate sauce and enjoy them with our loved ones. It’s an easy recipe to make, but with a spectacular result that will delight everyone's taste buds! Enjoy your meal!
