- 1 packet of Dr. Oetker instant cocoa cream
- 7 tablespoons of sugar
- 2 tablespoons of ground walnuts
- a pinch of baking powder
- 1 packet of Bourbon vanilla sugar
- 1 crushed clove
For the cream:
- 1 liter of plant-based whipped cream
- 3 eggs
- 200 ml milk
- 150 g sugar
- 300 g pieces of fresh pineapple
- 1 packet of food gelatin
For decoration:
- 1 packet of gelatin
- 100 ml water
- 150 ml crushed kiwi pulp
- a bunch of grapes
- 100 g chocolate
- a few physalis fruits
For soaking:
- champagne
Preparation method
Step 1: Preparing the base
1. Preheat the oven to 180°C. Make sure you have all the ingredients ready at hand.
2. In a large bowl, beat the egg whites until you get a firm foam. This step is crucial to ensure a fluffy base.
3. Gradually add the sugar, continuing to mix until a glossy meringue forms.
4. Gently incorporate the egg yolks, baking powder, vanilla sugar, crushed clove, and ground walnuts. Mix gently using a spatula until well combined.
5. Add the instant cocoa cream and mix gently. Pour the mixture into a greased and floured cake pan (or lined with baking paper).
6. Bake in a preheated oven for about 30 minutes, but do not open the oven door in the first 20 minutes to avoid lowering the base.
Step 2: Preparing the cream
1. In a saucepan, over a double boiler, add the 3 egg yolks, milk, and sugar. Stir constantly until the cream thickens and has a consistency similar to sour cream.
2. Let the cream cool slightly, then add the gelatin previously soaked in cold water and liquefied over the double boiler.
3. Gently fold in the 3 beaten egg whites and 800 ml of whipped cream. Finally, add the pieces of fresh pineapple. This combination of flavors will give your cream an exotic taste.
Step 3: Assembling the cake
1. Place the first layer of base on a platter. Generously sprinkle with champagne to give it a moist and aromatic flavor.
2. Add half of the pineapple cream, leveling it evenly.
3. Place the second layer of base on top and sprinkle it again with champagne.
4. Cover the cake with the remaining cream and refrigerate for at least 2 hours, but ideally overnight for the flavors to blend perfectly.
Step 4: Decorating the cake
1. Soak the gelatin in 100 ml of cold water. Once hydrated, liquefy it over a double boiler.
2. Meanwhile, crush the kiwi pulp in a blender and caramelize it with a tablespoon of sugar until the sugar crystals melt.
3. Add the liquefied gelatin over the kiwi pulp and mix well.
4. Carefully pour this mixture over the cake, ensuring it doesn't spill over the edges.
5. Cover with the remaining 200 ml of whipped cream and decorate with chocolate-coated fruits, chocolate shapes, or as per your imagination.
Serving and suggestions
This "Differently" cake is served cold, making it ideal alongside a cup of coffee or a glass of white wine. You can pair it with a berry sauce or vanilla ice cream for a contrast of textures and flavors.
Nutritional benefits
The cake contains varied ingredients that bring nutritional benefits. Pineapple is rich in vitamins and digestive enzymes, while kiwi is an excellent source of vitamin C and fiber.
