Stuffed Mushrooms

To prepare a delicious and flavorful meal, we will make a recipe for stuffed mushrooms, a variant that will delight both family and guests. We will start by preparing the filling, which is the key to this recipe. We take a fresh carrot, which we finely grate, and add it to a pan along with a medium onion chopped finely and a colorful bell pepper, preferably red or yellow, which will add a touch of sweetness and color. We heat a little olive oil in a pan, then add the chopped vegetables. We sauté them over medium heat, stirring constantly, until the onion becomes translucent and the carrot changes texture.

Once the vegetables are sautéed, we take feta cheese or telemea, which we crumble with a fork and add to the pan. We mix everything well, then turn off the heat, allowing the filling to cool slightly. In the meantime, we take care of the mushrooms. We choose large mushrooms, such as champignon or pleurotus, which we carefully clean to avoid damaging them. We wash them under cold running water, making sure to remove any impurities, then let them drain.

After the filling has cooled, we fill each mushroom with it, being careful not to overcrowd them, but to leave a little space for a golden crust to form in the oven. After we have filled all the mushrooms, we place them in a baking dish, and between them, we add some sliced green or black olives for extra flavor. In a separate bowl, we prepare a mixture of dry white wine, tomato paste, and water. This liquid will add juiciness and help cook the mushrooms evenly.

We pour this liquid mixture into the dish, being careful to cover the filling, but without drowning the mushrooms. We preheat the oven to 180 degrees Celsius and place the dish in the oven, letting the mushrooms bake for about 30 minutes. In the end, the mushrooms will be tender, and the filling will be perfectly cooked. We serve them warm, sprinkled with fresh herbs like parsley or dill, for an extra touch of freshness.
