Strawberry and Chocolate Dessert
To prepare a refined and delicious dessert, we will start by separating the egg whites from the yolks of the three eggs. In a large bowl, we add the egg whites along with the ones we have set aside. Using an electric mixer, we will beat them on high speed until we obtain a dense and glossy foam. It is essential that the egg whites are at room temperature for better whipping. Once the foam starts to form, we gradually add the four tablespoons of sugar. We continue to mix until the sugar is completely dissolved and we achieve a firm foam. Finally, we add a few drops of rum essence, which will provide a subtle and delicious aroma. After we are done, we put the bowl with the egg white foam in the refrigerator to firm up a little.
Now we turn our attention to the yolks. In another bowl, we mix the three yolks with the granulated sugar and vanilla sugar. Using a whisk, we mix well until the mixture becomes homogeneous and fluffy. Then, we carefully start to incorporate the milk, being careful not to form lumps. After obtaining a uniform mixture, we place the bowl over a bain-marie. We stir constantly for 8-10 minutes, during which we gradually add a spoonful of vanilla pudding, which will enrich the cream with a delicate and creamy taste.
After we finish mixing, we take the pot off the steam and let the cream cool to room temperature. Once cooled, it is time to incorporate the egg white foam into the yolk cream. We do this with a spatula, gently mixing so as not to lose the air from the foam. We obtain a fine and airy composition, perfect for our dessert.
Now that we have finished the cream, we can start assembling the dessert. We prepare ice cream cups or bowls in which we will alternate layers of cream and fresh fruits. We recommend strawberries, but you can also use other seasonal fruits, such as raspberries or peaches. We start with a layer of cream, followed by a generous layer of sliced strawberries, continuing with another layer of cream. Finally, we decorate with grated dark chocolate, which will add a pleasant contrast of taste and an attractive appearance.
The dessert is now ready to be served! Make sure to let it chill for a few minutes before enjoying it. Bon appétit!
