To prepare a savory dish with pork leg, smoked meat, and sausages, start by cutting the pork leg and smoked meat into suitable cubes. Make sure the cubes are of uniform size for even cooking. Then, slice the sausages into rounds of about 2 centimeters, so they integrate perfectly into the dish, providing a delicious texture and taste.
In a large pot, heat the oil, being careful not to make it too hot to avoid burning the ingredients. Add the sliced onion and let it sauté lightly, stirring occasionally. The onion should become translucent and reveal its flavors, which will add a tasty base to the dish. Once the onion has softened, add the cubed pork leg and mix well to combine with the onion. Let the meat stew so that the juices are released and the flavor concentrates.
After the pork leg has stewed and started to change color, add the smoked meat and sausage rounds. These will add a rich taste and an enticing aroma. Let everything cook together for about 5 minutes, stirring occasionally. After this time, pour in the white wine, which will deglaze the pot, bringing to the surface the caramelized flavors from the bottom. Then add 100 ml of water and the bay leaf, which will infuse the dish with a subtle and pleasant taste.
Cover the pot with a lid and let it simmer on low heat for about 50 minutes. It is important to stir occasionally to ensure nothing sticks to the bottom of the pot. If you notice that the dish is becoming too dry, add a little more water or wine. After 50 minutes have passed, it's time to season with salt and pepper to taste.
Add the broth dissolved in water and the crushed garlic, letting the dish simmer for another 15 minutes. These ingredients will intensify the flavors and give a rich and consistent taste.
Serve this dish alongside soft polenta and fried eggs, and for an extra touch of flavor, grate fresh cheese on top. This delicious combination will turn the meal into a memorable culinary experience, each bite being a true feast for the taste buds. Enjoy this dish in the company of loved ones, savoring the flavors and culinary traditions it brings.
