Preparation Time: 30 minutes
Baking Time: 30 minutes
Total Time: 1 hour
Number of Servings: 10 servings

Ingredients

For the Base:
- 5 fresh eggs
- 150 g sugar
- 150 g flour
- 1 pinch of salt
- 1 packet of vanilla
- 5 tablespoons of warm water

For the Cream:
- 4 egg yolks
- 100 g sugar
- 50 g flour
- 500 ml milk
- 1 packet of vanilla
- 250 ml liquid cream

For Decoration:
- 250 ml liquid cream
- 1 can of peach compote (800 g)
- Yellow food coloring (optional)
- Colorful candies (optional)

Preparing the Base

1. Beat the Eggs: In a large bowl, add the eggs, sugar, salt, and warm water. Using a mixer, beat these ingredients for 15-20 minutes until you achieve a fluffy and airy composition. This is essential for a successful base, so don’t skip this step!

2. Add the Dry Ingredients: Sift the flour and add the vanilla. Mix with a wooden spoon, being careful not to deflate the composition. The movements should be gentle, from bottom to top.

3. Bake the Base: Preheat the oven to 180°C. Pour the composition into a buttered and floured baking pan. Bake for 25-30 minutes, testing with a toothpick. It should come out clean when inserted into the center of the base.

Preparing the Cream

1. Mix the Egg Yolks: In another bowl, mix the egg yolks with the sugar, add the flour and vanilla. Mix well to obtain a homogeneous composition.

2. Add the Milk: Gradually start adding the milk, continuing to mix. This step is important to avoid lumps.

3. Thicken the Cream: Place the composition over low heat and let it boil, stirring constantly for a few minutes until it thickens. Once the cream is ready, let it cool.

4. Whip the Cream: When the cream is completely cooled, whip the liquid cream with a little vanilla until it becomes firm. Incorporate part of it into the cooled cream, mixing gently from bottom to top.

Assembling the Cake

1. Prepare the Peaches: Drain the peaches from the compote and slice them. Save the compote juice to soak the base.

2. Cut the Base: Once cooled, cut the base into 3 equal parts.

3. Layer of Cream and Peaches: Place the first part of the base on a platter. Soak with compote, then add half of the cream and spread it evenly. Place peach slices on top.

4. Continue Assembling: Add the second base, soak it, put the remaining cream and peach slices, then cover with the last base, which you also soak.

5. Decorate the Cake: Whip the remaining cream (divided in two) with yellow food coloring if you want a colorful touch, while leaving part plain. Cover the cake with a thin layer of white cream, then decorate with peach slices and colorful candies.
