Step by Step

1. Preparing the Layers
Start by roasting the nuts in a dry pan, being careful not to burn them. Let them cool, then finely grind them in a food processor.

In a clean bowl, beat the egg whites with a pinch of salt until they become frothy. Gradually add the sugar, continuing to mix until you achieve a firm meringue. Gently fold in the flour and ground nuts with a spatula to avoid losing air from the mixture.
