To prepare a delicious bean paste, we will start by washing the beans very well in a few cold waters. This step is essential to remove impurities and any residues. Once the beans are cleaned, we let them soak, ideally for a few hours or even overnight. This process will help reduce the boiling time and make the beans easier to digest.

After the soaking time is over, we put the beans in hot water and let them boil. It is important to boil the beans for 5-10 minutes, then strain them to eliminate water full of substances that may affect the taste. We repeat this draining and boiling process two more times, ensuring that the beans are well prepared. Now, at the last boiling, we want the bean to become so soft that it crushes itself.

In the last 20 minutes of boiling, we add sliced carrots and the white root, which will add flavor and sweetness to the dish. Don't forget to season the mixture with salt and pepper, adjusting the taste to your preferences. It is important that the water on the beans is not too much, to achieve a consistent paste. If there is excess water, we can drain it, but do not throw away all the water, as we will use it to adjust the texture of the paste.

Once the beans are cooked, we transfer them to a blender and puree them until they become a fine and smooth paste. If the paste is too thick, we gradually add the reserved water to achieve the desired consistency.

In a separate pan, we heat the oil and add finely chopped onion, letting it sauté until it becomes translucent. Finally, we add the paprika and crushed garlic, then turn off the heat. This aromatic combination will give the bean paste an unmistakable taste.

Together with the sautéed onion, we blend everything, obtaining a fine and fluffy paste. Finally, we use a mixer to whip the paste, gradually adding the oil to improve its texture and give it an airy consistency.

The bean paste is served with fried onion on top or with a drizzle of pumpkin oil for an extra flavor. This recipe is not only delicious but also nutritious, perfect for a fasting meal or as an appetizer for any occasion. Bon appétit!
