Pilaf (the Simplest and Most Delicious Recipe)
We wash, clean, and chop the vegetables according to preference, making sure to cut them evenly so they cook evenly. We heat the oil in a large pan, ideal for cooking all the ingredients together. When the oil is slightly heated, we add the cube of butter, being careful not to burn it, as burnt butter can alter the taste of the dish. Once the butter is completely melted and the oil is gently sizzling, we start adding the chopped vegetables, one by one, according to personal preference. I choose to start with finely chopped bell pepper, followed by grated carrots and parsnips, then chopped onion and sliced celery stalks.
We sauté them over medium heat, stirring constantly, until they begin to soften, being careful not to change color, which could indicate overcooking. This step generally takes a maximum of 10 minutes. After the vegetables are prepared, we add the rice. I prefer to add it unsoaked, but for those who wish, there is an option to soak it beforehand; this is not mandatory, as the rice will slightly swell from the water. Without the starch on the grains, the rice will not have that creamy texture. We let the rice fry a bit, to form a light crust, which will help achieve an al dente texture.
After this important step, we add warm chicken or vegetable broth in stages. It is essential to use warm broth to avoid interrupting the cooking process. We add a cup of broth, cover the pan, and let the rice absorb the liquid. Only after it has been completely absorbed do we add another cup of broth. We continue this process until we finish adding all the broth. It is important to season with salt and pepper to taste, to enhance the flavors.
Finally, we wash and finely chop the fresh parsley leaves, adding them to the dish after we have turned off the heat. They will add a touch of freshness and flavor to the dish. We let everything sit covered for 10-15 minutes, so the flavors can combine perfectly. Our dish is now ready to serve, full of flavor and vibrant colors, ideal to be enjoyed with loved ones.
