Cocchini (Coconut Grated Cookies)
To prepare these delicious coconut meringues, the first step is to weigh the egg whites. It is important to consider the size of the eggs, as this can influence the amount of ingredients we will use later. Thus, if we have 3 large egg whites, we will add equal amounts of sugar and coconut, which will ensure a balanced taste and a perfect texture.
In a saucepan, we combine the egg whites with the sugar and place them over low heat, stirring constantly. This step is crucial, as we want to ensure that the sugar completely melts into the egg whites without turning them into an omelet. We stir with a spatula or a whisk, being careful not to let the mixture boil. After a few minutes of stirring, we will realize that the sugar has melted, and the mixture becomes homogeneous and slightly frothy.
Once we have obtained a well-bound mixture, we add the coconut flakes and carefully mix, ensuring that they are evenly integrated into the composition. It is time to preheat the oven to 200°C, an ideal temperature for baking the meringues. We prepare a tray, covering it with baking paper, and use a teaspoon to form small mounds of the mixture. It is important to leave enough space between them, as these meringues will slightly rise during baking.
