Pumpkin and Wine Donuts
To prepare a delicious roasted pumpkin recipe, start by peeling the pumpkin and cutting it into suitable slices. Make sure the slices are not too thick so they cook evenly. In a large pot, bring water to a boil, adding a little salt to enhance the flavor. Add the pumpkin slices to the boiling water and cook them until they become soft, but do not overcook them to avoid turning them into puree. Once the pumpkin is cooked, drain it well and let it cool.
After it has cooled, mash the pumpkin with a fork or, for a finer result, pass it through a meat grinder. Add grated orange or lemon zest, which will add a note of freshness and pleasant aroma. In a separate bowl, sift the flour. Start with 250 grams, but be careful to add more gradually if needed to achieve the desired consistency. Over the flour, add the egg yolks one at a time, mixing well after each until they are completely incorporated.
Once the yolks are well mixed, add the sugar, pumpkin puree, orange juice, and wine, all of these ingredients serving to flavor the preparation. It is important to add these ingredients gradually and to continuously homogenize the mixture to avoid lumps. The final consistency should be much thicker than that of pancake batter, able to be taken with a spoon but slightly softer.
Let the batter rest for an hour, allowing the ingredients to settle and the flavors to blend. During this time, you can prepare the pan by heating oil in a deep skillet. When the oil is hot, start putting a spoonful of batter in the pan, forming small piles. Fry them over medium heat, making sure they brown evenly on all sides, as they cook quite quickly.
Once the piles are nicely browned, remove them with a spatula and place them on a paper towel to absorb the excess oil. Let them cool slightly, and before serving, don't forget to generously dust them with powdered sugar to add a final note of sweetness. These delicious pumpkin treats are perfect as a dessert or snack, being not only tasty but also very visually appealing. Enjoy them with a cup of tea or coffee for a perfect indulgent moment!
