- 50 g green coconut
Step by Step: Preparing the Nest Cake
Step 1: Preparing the sponge
Start by preheating the oven to 180°C. This is an important step to ensure the sponge bakes evenly.
Separate the eggs: place the egg whites in a large bowl and the yolks in another. Add a pinch of salt to the egg whites and beat them with a mixer until foamy. When the egg whites start to stiffen, gradually add the sugar while continuing to mix until you achieve a glossy meringue.
Transfer the beaten egg whites to a glass bowl. Add the yolks one by one, mixing well after each addition. Then, gradually add the flour and oil, folding gently with a spatula to aerate the mixture.
