To obtain an unparalleled delicacy, we start by preparing the necessary ingredients. We ensure we have on hand 3 fresh eggs, essential for giving the dough consistency, and 2 pinches of salt, which will enhance the flavor. In a bowl, we break the eggs and beat them well with a fork until they become frothy. Then, we carefully add 200 grams of flour, making sure to choose a quality type of flour to achieve perfect dough. It is important to mention that the amount of flour may vary depending on its type, so it is good to adapt accordingly.

We mix everything with a wooden spoon or with our hands until the ingredients combine, then we start kneading the dough. Kneading is essential to develop the gluten and achieve a fine texture. Once we have obtained a homogeneous dough, we roll it out with a rolling pin, creating a thin sheet. Over time, housewives used a rolling pin, but today there are also modern machines for rolling out dough that can make our work easier.

Once we have rolled out the dough, we cut it into long, narrow strips, which we will pass through the machine, gradually adjusting the thickness until we reach the last setting, in our case 9. These strips are covered with plastic wrap and a towel to prevent them from drying out. Then, we take each strip and cut it lengthwise, resulting in narrower bands.

Each band is then cut into squares or diamonds measuring approximately 1.5 cm by 1.5 cm. These shapes will become the base for gartenelii, also known as ear-shaped dumplings or csiga teszta. We take a square, place it on a spatula, and with the tip of the 'fus', with a gentle press, we start to roll the dough, thus forming those delicious gartenelii.

The gartenelii obtained can be boiled in meat broth, offering an unmistakable taste, but they can also be used as a delicious side dish for various dishes, such as paprikash or other savory meals. This type of homemade pasta adds a personal and authentic touch to meals, being appreciated by the whole family. Preparing these gartenelii is not only a pleasant activity but also a way to bring tradition into modern cooking.
