Cheese and raisin pie
To prepare a delicious cheesecake, the first step is to gather the necessary ingredients. Make sure you have on hand 4 eggs, 250 g of cottage cheese, 150 g of sugar, 200 g of sour cream, 100 ml of milk, the grated zest of one lemon, and 1 packet of vanilla sugar. You will also need 100 g of butter, 2 tablespoons of flour, and a pinch of salt to achieve a slightly airy texture.
Start by separating the egg whites from the yolks. In a large bowl, beat the yolks with the cottage cheese, sugar, sour cream, milk, lemon zest, and vanilla sugar. It is important to mix the ingredients well to obtain a homogeneous mixture, which will give the cake an intense aroma and a delicious taste. During this process, melt the butter in a bain-marie or in a small pan, being careful not to let it boil. Once the butter has melted, let it cool slightly before adding it to the bowl with the yolk mixture. Mix well to incorporate the melted butter.
After you have obtained a homogeneous mass, add the two tablespoons of flour. This will help stabilize the cake and give it a pleasant texture. Gently mix to avoid losing air from the mixture. In another bowl, beat the egg whites with a pinch of salt until you obtain a firm foam. This step is essential, as the egg white foam will make the cake light and fluffy.
Carefully fold the egg whites into the yolk mixture using a spatula, in circular motions from top to bottom. This will ensure that the air in the egg whites remains in the mixture, resulting in an airy cake.
Prepare a baking tray by greasing it with oil and dusting it with flour to prevent the cake from sticking. Pour the obtained mixture into the tray and level the surface with a spatula. Preheat the oven to a medium temperature, about 180 degrees Celsius, then place the tray inside. Bake the cake for 30-40 minutes or until it becomes golden and well browned on the surface.
Once the cake is baked, remove it from the oven and let it cool in the tray for a few minutes, then transfer it to a wire rack to cool completely. Before serving, dust it with powdered sugar, which will give it an elegant appearance and add a touch of sweetness.
