- 1 teaspoon salt
- 25 g fresh yeast cube
- 3 tablespoons extra virgin olive oil
- 2 tablespoons yogurt (you can use Greek yogurt for a creamier taste)
- 220 ml warm water
- Black and green olives, sliced (about 100 g, or more, to taste)
- 1 tablespoon olive oil and an egg yolk for brushing

Instructions:

1. Preparing the starter: Start by activating the yeast. In a small bowl, add the yeast cube and 2-3 tablespoons of warm water. Gently stir with a spoon until the yeast is completely dissolved. Let the starter sit for 10-15 minutes until it becomes frothy. This step is crucial as the activated yeast will ensure a fluffy bread.

2. Mixing the dry ingredients: In a large bowl, sift the flour and add the salt. Make a well in the center of the flour where you will add the activated starter.

3. Adding the wet ingredients: In the well of the flour, pour in the activated starter, olive oil, and yogurt. Begin mixing the ingredients with a spatula or your hands, gradually incorporating the flour from around.

4. Kneading the dough: Gradually add water, continuing to knead until you obtain a smooth and slightly sticky dough. If the dough is too wet, you can add a little more flour, but be careful not to overdo it. Knead for 8-10 minutes until the dough becomes elastic and smooth.

5. Incorporating the olives: Add the sliced olives into the dough and knead gently to distribute them evenly. The olives add a savory flavor and an interesting texture to your rolls.

6. Proving the dough: Place the dough in a bowl greased with oil, cover it with a damp towel, and let it rise in a warm place, away from drafts, for 1-1.5 hours or until it doubles in size.

7. Shaping the rolls: After the dough has risen, turn it out onto a lightly floured surface. Divide the dough into 12 equal portions and shape them into balls. Place them on a baking tray lined with parchment paper, leaving space between them to rise.

8. Second proving: Cover the rolls with a towel and let them rise again for 30 minutes.

9. Preparing for baking: Preheat the oven to 200°C. Before putting them in the oven, brush each roll with a little olive oil and beaten egg yolk for a golden and shiny crust.

10. Baking: Bake the rolls for 25-30 minutes or until they turn golden and sound hollow when tapped gently on the bottom.

11. Serving: Let them cool slightly on a rack, then serve warm, accompanied by feta cheese or a garlic yogurt dip. These rolls are also excellent for pairing with a soup or salad.
