To prepare this delicious cottage cheese and cocoa cake, start by sifting together the flour, baking powder, and cocoa in a large bowl. It is important to mix them very well to avoid lumps. Once you have a homogeneous mixture, set it aside and prepare the following ingredients.

In another bowl, beat the egg whites with a pinch of salt using an electric mixer. It is essential to use a clean and dry bowl to achieve a well-beaten foam. Continuing to mix, gradually add the sugar, one tablespoon at a time, until you obtain a stiff and glossy foam that forms firm peaks. This step is crucial, as the egg white foam will add air and lightness to the cake.

After the egg whites are beaten, add the yolks, one at a time, mixing continuously. Start adding the oil, pouring it in a thin stream so as not to deflate the foam. The next step is to incorporate the flour and milk mixture. Do this by alternating 2-3 tablespoons of the flour mixture with a portion of milk, continuing to beat. This process ensures a fine and even texture.

Once all the ingredients are well combined, pour the mixture into a baking tray lined with parchment paper, measuring 25x35 cm, leveling the surface with a spatula.

For the filling, mix the cottage cheese with the sugar, eggs, and your preferred flavors, such as vanilla essence or lemon zest, to enhance the taste. Don't forget to incorporate raisins and grated lemon zest for added flavor. Then, using a spoon, place dollops of the cheese filling evenly over the surface of the batter in the tray.

Preheat the oven to 180 degrees Celsius and place the tray in the oven. The cake will need about 35-45 minutes to bake, but it is recommended to perform the toothpick test to check if it's done. When the toothpick comes out clean, the cake is perfectly baked.

After you take the cake out of the oven, let it cool in the tray on a rack. This step is important to avoid condensation that could make the cake moist.
