Apple pie with caramel cream

 Ingredients: 10 apples 2 cups sugar 8 eggs 1/2 l milk flour chocolate + whipped cream for decoration

To create a decadent and savory apple cake, we start by caramelizing a cup of sugar. This process will transform the sugar into a golden caramel, and its aroma will add a wonderful note to our cake. In a wider pot, it is ideal to use one with a thick bottom to avoid burning the sugar. Once the sugar has melted and taken on an amber hue, we spread it evenly over the bottom of the pot, ensuring that we cover the entire surface.

After completing this crucial step, we turn our attention to the apples. We choose fresh, preferably tart apples that pair perfectly with the sweetness of the caramel. We peel the apples and remove the seeds, slicing them thinly for even baking. These are placed on top of the already hardened caramel, creating a delicious base for our cake. Once we have arranged the apples, we place the pot in the preheated oven at 180 degrees Celsius for about 20 minutes, until the apples become tender.

Meanwhile, we prepare the main composition of the cake. In a large bowl, we beat 4 egg whites with a pinch of salt until we achieve a firm foam. We gradually add 6 tablespoons of sugar, continuing to beat until we obtain a glossy foam. Separately, we mix the 4 egg yolks with ½ liter of milk, then combine the two mixtures, being careful not to let the foam deflate. This mixture is carefully poured over the apples in the pot and returned to the oven for another 15 minutes.

After this layer has baked, we prepare for a third layer. We beat 4 egg whites again with 4 tablespoons of sugar until they form a foam, to which we add the 4 egg yolks and 4 tablespoons of flour. This airy mixture is gently poured over the cream in the oven, ensuring that it blends harmoniously. We let everything bake for 15-20 minutes until the top layer becomes golden and slightly risen.

Once we take the cake out of the oven, we let it cool slightly. Then, we invert the pot onto a platter, allowing the cake to release easily. It is important to let the cake sit like this for an hour, so the caramel can melt slightly and integrate into the cake. Finally, we decorate this delight with whipped cream and grated chocolate, adding an elegant touch and an unmistakable taste.
