To prepare this delicious cake, we start by ensuring that we have all the ingredients at hand and that they are of the best quality. In a large bowl, we will add the soft margarine, which should be at room temperature, to help us cream it easily. Then we add the grated coconut, an ingredient that will give an aromatic taste and a pleasant texture to the cake.

After we have well creamed the margarine with the coconut, we will add the sifted flour along with the baking powder. It is important to sift the flour to avoid lumps and ensure a fine and uniform mixture. We gently mix the dry ingredients, then we will add the beaten eggs, along with the sugar and vanilla sugar. The latter will add sweetness and flavor to the cake, making it even more appealing.

After we have obtained a homogeneous mixture, it is time to pour in the milk, but we do this gradually, stirring constantly to avoid lumps. The milk will contribute to achieving a fluffy and moist texture, essential for the success of our cake. Once the milk is fully incorporated, the mixture should have a fluid consistency, but not too runny.

Now, we prepare the tray we will use to bake the cake. It is recommended to grease it with a little oil or margarine and dust it with flour to prevent sticking. We pour the mixture into the tray and ensure it is evenly distributed. The oven should be preheated to a moderate temperature, and the cake will be baked for about 40 minutes. It is important not to open the oven door in the first 30 minutes to avoid affecting the rising process.

When the cake starts to take on a beautiful golden color, it is a sign that it is almost ready. We can check it by inserting a tester in the middle; if it comes out clean, the cake is baked. After we take the cake out of the oven, we let it cool a bit in the tray, then we can transfer it to a rack to cool completely.

This cake will have a soft, moist base that will perfectly combine with the golden, crunchy coconut crust on top, creating a contrast of textures and flavors that will delight any dessert lover. Serve it alongside a cup of tea or coffee and enjoy every bite!
