Preparation time: 30 minutes
Cooking time: 30 minutes
Total time: 1 hour
Number of servings: 6-8

Ingredients:
- 7-8 bunches of fresh red lamb's lettuce
- 1 bunch of chard (optional)
- 2 medium carrots
- 2 medium potatoes
- 1 small celery (root and a few leaves)
- 1 parsnip
- 1 bunch of green lovage
- 1 bunch of parsley
- 1 dried onion (optional)
- 1 bunch of green onions
- 2 green garlic stalks
- 1 zucchini
- 1 liter of borscht
- 4 egg yolks
- 2 eggs
- Delikat (or salt, to taste)
- A little oil for sautéing
- Generous sour cream (250-400 ml)

Preparation of lamb's lettuce soup:

1. Preparing the ingredients: Start by washing all the vegetables very well, especially the lamb's lettuce and chard, to remove impurities. It is important to use clean cold water and change the water several times. Peel the carrots and celery and grate them, while finely chopping the onion and garlic, including the leaves.

2. Sautéing the vegetables: In a large pot, heat a little oil over medium heat. Add the chopped onion and garlic and sauté until they become translucent. This step will add a delicious flavor to your soup. After about 5 minutes, add the grated carrots and celery and sauté them together for another 3-4 minutes.

3. Adding water: Pour boiling water into the pot, being careful not to stop the boiling. This trick will help preserve the flavors and nutrients. Add the diced potatoes (you can use a special shape to give them an attractive form).

4. Boiling the vegetables: Let the vegetables boil for about 10-15 minutes, until the potatoes are half-cooked. Now is the time to add the diced zucchini, lamb's lettuce, and chard cut into suitable strips. These ingredients will add vibrant color and fresh taste to your soup.

5. Preparing the borscht: In another container, boil the borscht along with a whole onion and a few stalks of lovage. This step will intensify the flavor of the borscht. Once the borscht starts boiling, add it to the pot with the soup.

6. Beating the eggs: In a separate bowl, beat the 2 eggs well. This is a secret to adding a creamy consistency to the soup. As soon as you take the soup off the heat, add the beaten eggs, stirring quickly to avoid coagulation.

7. Preparing the sour cream: Mix the egg yolks well with 200 ml of sour cream, which you have taken out of the fridge some time before to bring it to room temperature. Gradually add a little broth to the sour cream and mix well. This step will prevent the sour cream from curdling. Once the mixtures are at the same temperature, pour them into the soup.

8. Finalizing the soup: Add the remaining chopped greens (lovage and parsley) to the soup, mixing well. Season with Delikat or salt to taste. The lamb's lettuce soup is served cold, so it is ideal to let it chill in the fridge for a few hours before enjoying it. Sprinkle fresh greens on top and add generous sour cream when serving.

Practical tips:
- Use fresh red lamb's lettuce for vibrant color and a more intense flavor.
- If you want a richer version, add a few drops of lemon juice before serving to enhance the flavors.
- Lamb's lettuce soup pairs perfectly with a tomato and cottage cheese salad or a slice of fresh bread.

Nutritional benefits:
Lamb's lettuce soup is an excellent source of vitamins and minerals due to the fresh vegetables. Lamb's lettuce is rich in vitamin C, iron, and antioxidants, while sour cream adds a boost of calcium and healthy fats.
