Ingredients
*For the white layer:*
- 2 eggs
- 2 tablespoons sugar
- 1 tablespoon oil
- 1 tablespoon cornstarch
- 2 tablespoons flour
- Vanilla essence
- 5 g baking powder
*For the brown layer:*
- 2 eggs
- 2 tablespoons sugar
- 1 tablespoon oil
- 1 tablespoon cornstarch
- 1 tablespoon flour
- 1 tablespoon dark cocoa
- Rum essence
- 5 g baking powder
*For the coconut mousse:*
- 2 eggs
- 5 tablespoons sugar
- 100 g coconut
- 350 ml milk
- 3 tablespoons cornstarch
- 250 ml liquid cream
- 5 g gelatin
*For the chocolate ganache:*
- 200 g dark chocolate
- 250 ml liquid cream
*For decoration:*
- Raffaello candies
- 100 g biscuit crumbs
Preparation
1. White layer:
In a large bowl, beat the egg yolks with the sugar and vanilla essence until you get a fluffy cream of bright yellow color. Add the oil, then incorporate the mixture of cornstarch, flour, and baking powder. Mix well to obtain a homogeneous composition.
In another bowl, beat the egg whites with a pinch of salt until you get a firm foam. Gently fold the egg whites into the yolk mixture, being careful not to lose the air in the mixture.
Pour the mixture into a 24 cm pan lined with baking paper, and bake in a preheated oven at 180°C for 20-25 minutes, or until the layer is golden brown on the edges. Check with a toothpick if it is well baked.
2. Brown layer:
Repeat the steps above, but replace one tablespoon of flour with one tablespoon of dark cocoa. This layer will add a chocolate note that will perfectly match the coconut mousse.
3. Coconut mousse:
In a saucepan, bring the milk to a boil. When it starts to boil, add the coconut and mix well. Let it sit for a few hours to allow the flavors to develop. After that, strain the coconut through a sieve.
In a bowl, beat the eggs with the sugar until they double in volume. Add the cornstarch and mix vigorously to avoid lumps. Next, put the milk back on the heat, and when it’s hot, slowly pour it over the egg mixture, stirring continuously. Return to the heat and stir until the cream thickens.
Allow the cream to cool, then soak the gelatin in a few tablespoons of cold water and add it to the egg cream. Mix well to homogenize. Finally, fold in the whipped cream.
4. Chocolate ganache:
Break the chocolate into small pieces and place it in a bowl together with the liquid cream. Bring the mixture close to boiling point, then stir until the chocolate completely melts and becomes a homogeneous mixture. Let it cool for a few hours, then whip until you get a light and fluffy cream.
5. Assembling the cake:
Place the white layer on a platter and soak it with a mixture of milk, sugar, and rum essence, to taste. On top of this, add the chocolate ganache, and over the brown layer add the coconut mousse. Cover everything with a thin layer of biscuit crumbs and refrigerate for a few hours, preferably overnight.
The next day, add a generous layer of biscuit crumbs on top and decorate with Raffaello candies for a festive appearance.
