Ant Cake
Ingredients: -2 sheets of puff pastry and two more sheets made as follows: For the first sheet we need: -6 egg whites -8 tablespoons of sugar -2 tablespoons of flour -6 tablespoons of ground walnuts -a pinch of baking powder For the second sheet: The same ingredients only that instead of walnuts, 6 tablespoons of poppy seeds will be used. Cream: -12 egg yolks -12 tablespoons of sugar -2-3 packets of vanilla sugar -100 ml of water -a pack of margarine or butter
To prepare a savory and refined dessert, we start with the preparation of the base layer. In a large bowl, the egg whites are beaten with sugar until a dense and glossy foam is obtained. It is essential that the egg whites are at room temperature to whip properly. Once the foam reaches the desired consistency, flour, previously mixed with baking powder, is carefully added to ensure uniformity in the composition. At this point, it is important to also add the ground nuts, gently mixing with a spatula so as not to deflate the foam.
After we have completed the mixture, we pour it into a baking tray lined with parchment paper, ensuring it is evenly distributed. It is placed in a preheated oven at 180 degrees Celsius and baked for about 25-30 minutes, or until the layer becomes golden and an appetizing crust forms. It is important not to open the oven door in the first 20 minutes to prevent the temperature from dropping and compromising the texture of the layer.
In the meantime, we take care of preparing the delicious cream. The egg yolks are placed in a heat-resistant bowl, together with the sugar and a little water. The bowl is set over a pot of boiling water, stirring continuously over the steam until the mixture thickens and becomes creamy. This is a crucial step, as a well-prepared cream will add flavor to the dessert. Once the cream has cooled, a package of margarine or butter is added, mixing until it is fully incorporated and homogeneous.
Now that we have both the layer and the cream, we can assemble the dessert. We start by placing a wafer layer on a platter. We spread this layer with a generous layer of cream, then add a layer with nuts, continuing with another layer of cream. Next is a layer with poppy seeds, which will bring a distinct taste and interesting texture. We repeat the cream spreading process, finishing with the last wafer layer. It is important to let the dessert sit for a few hours, ideally overnight, to allow the flavors to meld and achieve a perfect consistency.
