Lentil Pâté
To prepare a lentil delight, we start by preparing the lentils, which need to be soaked in cold water for about two hours. This step is essential as it helps reduce cooking time and improves the texture of the beans. Once the lentils have hydrated, we drain them and put them to boil in a pot with fresh water, being careful to add salt. It is important that the water is enough to cover the lentils but not excessive, so as not to dilute the flavors.
After the lentils have boiled, we let them cool in the water they boiled in, which will allow the beans to absorb the added flavors. When the lentils are almost cool, we add a few slices of bread to the same pot. This will help achieve a finer and creamier texture of the final dish, as it will soak and integrate perfectly into the mixture.
In the meantime, we take care of the vegetables. We peel and cut the carrots and potatoes into suitable cubes. These are boiled in a pot with salted water until they become tender. It is important not to let them boil too much, to keep a pleasant texture and distinct flavor. Meanwhile, we dedicate ourselves to the onion, which we chop finely. We sauté it in a pan with half the amount of oil until it becomes golden and starts to release its flavors.
Once the vegetables have boiled and cooled, we drain them well and add them over the lentils and soaked bread. Here, we also add the sautéed onion to complete the mixture. We sprinkle fresh herbs, such as parsley or dill, and adjust the taste with salt and pepper, to preference. To achieve a uniform texture, we blend everything using a blender or food processor until the mixture becomes homogeneous.
Once we have a smooth mixture, we pour it into a loaf pan greased with oil, ensuring it is well distributed. We preheat the oven to a medium temperature and place the pan with our preparation inside. We bake for about 20 minutes, or until the surface becomes golden and appetizing.
When ready, we remove it from the oven and let it cool slightly before slicing. This lentil dish is perfect as a main course or as a side dish, being not only delicious but also healthy. It can be served warm or cold, alongside a fresh salad or flavorful sauces, offering an unforgettable culinary experience.
