Mini quiches with bacon are an excellent choice for any occasion, from parties to romantic dinners. This delicate appetizer, with a flaky crust and rich filling, is sure to impress your guests. Here’s how to prepare them step by step.
Ingredients:
For the pastry:
- 500 g French pastry (you can also use store-bought puff pastry for a simple and quick recipe)
- Flour for dusting
For the filling:
- 200 g bacon (preferably smoked, for an intense flavor)
- 4 eggs
- 200 ml cooking cream
- 100 g cheddar cheese or cottage cheese (optional)
- 1 small onion, finely chopped
- Salt and pepper to taste
- Herbs (dill, parsley, oregano - your choice)
Instructions:
1. Preparing the pastry: Meanwhile, preheat the oven to 180°C. On a clean surface, dust with a little flour and roll out the French pastry to a thickness of about 3-5 mm. Use a knife or cutter to cut circles with a diameter of about 10 cm.
2. Forming the cups: Place the pastry circles in the muffin tin, gently pressing them down on the bottom and sides to form cups. These will be the perfect base for the filling.
3. Preparing the filling: In a non-stick skillet, add the diced bacon. Cook over medium heat until crispy, then remove from the skillet and let drain on a paper towel. In the same skillet, add the chopped onion and sauté until translucent. This step will enhance the aroma and provide a more complex flavor to the quiche.
4. Combining the ingredients: In a large bowl, whisk the eggs with the cream, add the cooked bacon, sautéed onion, cheese (if using), and season with salt, pepper, and herbs. The mixture should be smooth and well combined.
5. Filling the cups: Pour the egg and bacon mixture into each cup, filling them about ¾ full. This way, when baked, the filling will rise slightly without spilling over the edges.
6. Baking: Place the tray in the preheated oven and let the mini quiches bake for 20-25 minutes, or until golden and the filling is set.
7. Serving: Once done, remove the mini quiches from the oven and let them cool for a few minutes in the tray. They can be served warm or at room temperature, making them perfect as an appetizer or snack. You can garnish them with fresh parsley or dill leaves for an attractive presentation.
Useful tips:
- You can also experiment with other ingredients in the filling, such as vegetables (peppers, mushrooms, spinach) or different cheeses (feta or goat cheese).
- If you want to make them even more appealing, you can add slices of tomatoes or olives on top of the filling before baking.
- These mini quiches can be prepared a day in advance and stored in the refrigerator, so you have an appetizer ready to serve for unexpected events.
These mini quiches with bacon are not only delicious but also offer an elegant presentation, making them ideal for impressing any guests. Prepare them with confidence and enjoy the appreciative reactions!
I cut the small pastries from French dough and placed them in the tray. I filled them with diced and fried pork belly in its own juices in a non-stick pan, drained the fat, and added beaten eggs, sour cream, and raclette cheese. I baked at 200°C until they turned golden.
