Spicy and sour cabbage soup

The first step in making the soup is to prepare the ingredients. Start by slicing the cabbage into thin strips, making sure to remove the core. The carrot, on the other hand, should be peeled and grated or cut into small cubes, depending on your preference. In a large pot, heat a few tablespoons of olive oil over medium heat. Add the carrot and sauté for 2-3 minutes until it becomes slightly soft and releases its aroma.
After the carrot has sautéed, add the cabbage, mixing well to combine the flavors. Let them cook together for about 5 minutes, stirring constantly. Then, pour the vegetable or chicken broth into the pot, bringing everything to a boil. Once the soup starts to boil, reduce the heat and let it simmer on low for 20 minutes until the cabbage becomes tender.
To intensify the flavor of the soup, add the hot paprika, salt, and pepper to taste. Finally, squeeze the lemon juice into the soup, giving it that specific sour note. After mixing well, taste the soup and adjust the seasonings if necessary.

The spicy-sour cabbage soup is prepared as follows: the dried mushrooms are boiled for 10 minutes in the soup. Meanwhile, we prepare the vegetables. The cabbage is chopped coarsely. The carrots are cut into thin strips, the onion is sliced, and the ginger is grated. We heat the wok (a traditional Eastern cooking vessel), then add the oil, put in the green onion, stir 4-5 times, after which we add the carrot strips, mix, and after half to a maximum of 1 minute, add the cabbage and mix. We season with soy sauce and oyster sauce, mix and let it cook for another 2 minutes. We add the soup, season again with salt and sambal oelek. If necessary, you can add more soy sauce. Let it boil for 3-4 minutes with the lid on, during which we boil the noodles. They are boiled in water without salt for 2 minutes. They are drained and briefly rinsed with cold water.
