Fruit Cake (Plums) - a quick and delicious dessert
If you are looking for a simple and delicious recipe that brings a touch of joy to your table, the fruit cake, specifically with plums, is the perfect choice. This cake is not only easy to prepare but also very versatile. You can enjoy it warm or cold, making it ideal for concluding a family meal or impressing guests. Additionally, the combination of caramelized plums and toasted nuts gives it a unique, flavorful taste.
Preparation time: 20 minutes
Baking time: 30 minutes
Total time: 50 minutes
Servings: 8-10
Ingredients:
- 500 g ripe plums, pitted and halved
- 200 g sugar
- 200 g flour
- 150 g butter/margarine, at room temperature
- 3 eggs
- 100 g toasted nuts, chopped
- 1 packet of baking powder
- a pinch of salt
- vanilla essence (optional)
Instructions:
1. Preparing the pan: Start by preheating the oven to 180°C. Choose a large baking dish, grease it evenly with the butter or margarine wrapper, and dust it with flour. This step is essential to prevent the cake from sticking. You can also use parchment paper for extra safety.
2. Preparing the fruits: Wash the plums, remove the pits, and cut them in half. Place them in a bowl and, if desired, sprinkle with a little sugar and cinnamon to enhance the flavor. This step is optional but can add a special touch to the cake.
3. Preparing the batter: In a large bowl, beat the butter with the sugar until the mixture is fluffy and light in color. Add the eggs one at a time, mixing well after each addition, then add the vanilla essence if using. In another bowl, combine the flour, baking powder, and salt. Gradually incorporate the flour mixture into the butter mixture, stirring gently until combined.
4. Adding the nuts: Fold in the chopped toasted nuts into the batter, mixing gently to distribute them evenly.
5. Assembling the cake: Pour half of the batter into the prepared pan, place the plums on top, then pour the remaining batter over the fruit. This arrangement will allow the plums to caramelize beautifully during baking.
6. Baking: Place the pan in the preheated oven and bake the cake for about 30 minutes, or until golden and a toothpick inserted in the center comes out clean.
7. Cooling and serving: Once the cake is baked, let it cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
Serving suggestion: You can sprinkle a little powdered sugar on top of the cake or serve it with a scoop of sour cream or vanilla ice cream for a delicious contrast.
Variations: Instead of plums, you can use other seasonal fruits like peaches, apples, or cherries. Each variation will add a unique note to your cake. You can also add some spices, such as cinnamon or nutmeg, to enhance the flavors.
This plum cake is not just a simple recipe but also an opportunity to enjoy seasonal fruits. Try it and let yourself be carried away by its delicious flavors!
