Turkey thigh is a delicious choice for a special meal or family dinner, with a rich taste and juicy texture. Although the turkey thigh is smaller than the turkey leg, weighing about 400 grams including the bone, it can be transformed into a refined and savory dish. The first step is to debone the turkey thigh, ensuring that the skin is cleaned of any feathers and has been lightly singed over a flame to remove any impurities. After washing the thigh well, we cut it with a sharp knife to obtain an even layer of meat, thus facilitating the filling.

For the filling, we will grate or blend some fresh carrots, which add a sweet note and a pleasant texture, and we will chop the nuts, which will provide crunchiness and an intense flavor. In a bowl, we mix the grated carrots with the chopped nuts and raisins, which can be soaked in a little warm water to rehydrate and become fluffier. We add salt to taste and mix the ingredients well so that the flavors blend harmoniously. Then, we place the filling on the surface of the turkey thigh, making sure to distribute it evenly.

After adding the filling, we carefully roll the thigh, forming a tight roll. It is important to use kitchen twine to tie the roll, but before doing this, I prefer to secure the roll with a few toothpicks to keep it in place. Metal toothpicks are an excellent option as they are reusable and easier to handle. Once the roll is well tied, we remove the toothpicks. The edges of the meat may be more frayed, so we need to be patient and work carefully.

Once the roll is prepared, we place it in a baking dish with 1-2 tablespoons of water and put it in the preheated oven at about 200 degrees Celsius. It is important to bake the roll until it is beautifully browned, and the aroma will fill the entire kitchen. From time to time, we ladle some of the juices from the pan over it to keep the meat juicy and full of flavor. Once it is ready, we let the roll cool slightly, then we slice it. This dish will not only look appetizing but will also be a true delight for the taste buds, being perfect to be served alongside a side of vegetables or mashed potatoes. Enjoy every bite!
