To prepare a delicious and filling meal, we start by making the marinade that will flavor the meat. In a blender, we add the peeled onion cut into large pieces, the peeled garlic, freshly squeezed tomato juice, the best quality olive oil, and all our favorite spices: salt, pepper, sweet or hot paprika, cumin, and a dash of turmeric for a touch of color. We blend these ingredients until we obtain a creamy and homogeneous paste that will envelop the meat in flavors.

Once the marinade is ready, we pour it over the chosen meat, whether it is chicken, pork, or lamb, making sure that each piece is well coated. We cover the dish with plastic wrap and let it rest in the refrigerator for about 15 minutes. This time is essential for the flavors to penetrate deeply into the meat.

During this time, we dedicate ourselves to preparing the side dish that will accompany the meat. We wash the vegetables well: cucumber, tomatoes, and lettuce. We slice the cucumber thinly, dice the tomatoes, and tear the lettuce leaves into suitable pieces. These fresh vegetables will provide a refreshing contrast to the warmth of the cooked meat.

In a bowl, we finely chop a few mint, parsley, and celery leaves, which will add extra freshness to the dish. We crush a clove of garlic and add it to the bowl with yogurt. This yogurt will become a slightly tangy sauce, perfect for balancing the intense flavors of the meat. We add the chopped herbs and mix well, then season with salt and pepper to taste.

After the 15 minutes of marinating, we can shape the meat into sticks with wet hands, about the thickness of a finger and approximately 15-20 centimeters long. These sticks will develop a delicious texture when cooked. In a hot pan, we add a tablespoon of olive oil, and once it is hot, we carefully fry the meat sticks, turning them with a spatula to brown evenly on all sides.

When the meat becomes golden and crispy, it is time to sit down at the table. We serve the dish alongside fresh flatbread or warm bread, together with the vegetable side dish, and the yogurt sauce with herbs will perfectly complement this feast. Enjoy your meal!
