Pasta is a versatile food, loved by many cultures, and can be prepared in countless ways. Today, we will focus on a delicious pasta pudding recipe, perfect for a dessert or a sweet dish to enjoy with your loved ones. We start by bringing water to a boil in a large pot, adding a teaspoon of oil to prevent the pasta from sticking. Choose penne or fusilli pasta, as their shapes help hold the filling.

Once the water starts to boil, add the pasta and cook according to the package instructions, usually between 8 and 12 minutes, until al dente. Once ready, carefully drain them and rinse under cold running water to stop the cooking process. Let them drain well in a sieve.

Meanwhile, prepare the filling that will bring the pudding to life. In a large bowl, combine well-drained cottage cheese, sugar, the two beaten eggs, and a pinch of salt. Mix with a spatula until the mixture becomes smooth. Here you can also add raisins, which will add a touch of sweetness, along with spices like a pinch of cinnamon or vanilla essence to enhance the flavors. Gradually incorporate the cooked and cooled pasta into the cheese mixture, making sure to coat them evenly.

Prepare a baking dish by greasing it with butter or lining it with parchment paper to prevent the pudding from sticking. Carefully pour the pasta and cheese mixture into the dish, leveling it well with a spatula. This will ensure even baking and a pleasant texture. In a separate bowl, beat the two remaining eggs together with the sour cream until they form a smooth mixture, then pour the mixture over the pasta in the dish, making sure to cover the entire surface.

Place the dish in the preheated oven at 180 degrees Celsius and let the pudding bake for about 30-40 minutes, or until the surface turns golden and slightly browned. Once baked, remove the pudding from the oven and let it cool for 10-15 minutes. This step is important as it will make it easier to cut into even portions.
