Chicken in Oil
To prepare a delicious marinated chicken in a simple and savory style, the beginning is essential. The first step is to clean and wash the chicken meat well. Make sure to remove any traces of fat or skin, so that you achieve a healthier and tastier final result. Once the meat is clean, place it in a pressure cooker, also known as a 'kukta' or 'wonder'.
Enjoy an intense flavor by adding salt, a clove of garlic (either peeled and left whole or just washed) to enrich the taste. Add freshly ground pepper, bay leaves, and peeled and washed carrots, keeping them whole to help flavor the dish. Put oil in the pot, making sure it reaches a height of about half the height of the meat, without completely covering it.
Now, close the pot tightly with the lid and place it on low heat. Let it boil for about 30 minutes, from the moment the pot whistles or the safety rises, depending on the type of pot you are using. After the time has passed, it is important to let the pot cool down before opening it. Check if the meat is cooked properly; if it is not cooked enough, close the pot and let it stay on the heat for a few more minutes.
When the meat is perfectly cooked, remove it from the oil and start the deboning process. Place the pieces of meat in a glass dish, such as Jena or Pyrex, or even in a preserving jar. After you have arranged the meat, add the oil in which it was cooked on top, along with all the aromatic ingredients. Cover the dish with a lid or use clear plastic wrap, ensuring it is well sealed.
Let the dish marinate in the refrigerator for at least 12 hours, ideally, you should leave it overnight. This marinating will allow the flavors to penetrate deep into the meat, providing an exceptional taste. When you are ready to serve, heat the meat together with the sauce to obtain a warm and appetizing dish.
