Ingredients:
- 5 small new potatoes
- 2 small zucchini
- 3 carrots
- 200 g green beans
- 2 bell peppers (preferably one red and one green for added color)
- 1 bunch of green onions
- 1 can of peeled tomatoes (about 400 g)
- 2-3 cloves of garlic (optional)
- Fresh parsley (for garnish)
- Homemade Transylvanian noodles (they are wider and more substantial)
- Delikat (or salt, to taste)

Instructions:

1. Preparing the vegetables: Start by washing the new potatoes thoroughly under a stream of cold water. Once clean, cut them into appropriately sized cubes so they cook evenly. The carrots also need a thorough wash. Slice them into rounds or cubes, as preferred.

2. Preparing the green beans: Wash the green beans and cut them into pieces about 2-3 cm long. This will add a crunchy texture and pleasant flavor to the soup.

3. Boiling the vegetables: In a large pot, add all the chopped vegetables (potatoes, carrots, green beans, and diced bell peppers). Fill the pot with water up to about two-thirds of its capacity and add a little Delikat or salt. Let it boil over medium heat.

4. Adding tomatoes and seasonings: Once the vegetables start to boil, add the can of peeled tomatoes along with their juice. If desired, you can also add finely chopped garlic cloves to enhance the flavor. Mix the ingredients well.

5. Finishing the soup: After the vegetables are cooked (about 20-25 minutes), add the diced zucchini and let it boil for another 5-10 minutes. When all the vegetables are cooked, adjust the taste with Delikat or salt to preference.

6. Noodles: In the last 5 minutes of boiling, you can add the homemade Transylvanian noodles. They will add substance to the soup and make it a more filling dish.

7. Serving: Once the noodles are ready, take the soup off the heat. Sprinkle fresh chopped parsley on top for added freshness and flavor.

Serving suggestion: This vegetable soup is delicious served hot, alongside a slice of fresh bread or a crunchy crouton. You can also add a drizzle of olive oil for an even more intense flavor.

Possible variations: You can experiment with various vegetables depending on the season or personal preferences. For example, add fresh spinach or broccoli for an extra nutrient boost. Also, for a spicy version, you can add chili flakes.
