We wash the zucchinis, peel them, and cut them in half lengthwise. Using a teaspoon, we scoop out the inside of each half. We chop an onion and sauté it in hot oil for 2-3 minutes, then add the minced meat, tomato paste, and let it cook for 7-8 minutes, stirring occasionally. If you like, you can also add some of the scooped-out zucchini (the part we removed) chopped finely and sautéed with the meat. We add salt, pepper, and can turn off the heat. We take a spoonful of the meat mixture and fill each half of the zucchini. We place the zucchinis in a pot, add 1 cup of water, and bake for 40-50 minutes. When ready, we sprinkle grated cheese on top (I had a little) and leave it in the oven for another 5 minutes, then sprinkle chopped fresh parsley on top. Enjoy your meal!
