Preparation time: 20 minutes
Baking time: 40 minutes
Total: 60 minutes
Number of servings: 12
Ingredients for the dough:
- 250 g flour
- 1 packet (10 g) baking powder
- 50 g cocoa powder
- 150 g granulated sugar
- 1 packet (5 g) vanilla sugar
- 100 ml sunflower oil
- 2 large eggs
- 150 ml milk
Ingredients for the filling:
- 500 g cottage cheese (preferably well-drained)
- 150 g sugar
- 2 eggs
- 1 packet (5 g) vanilla sugar
- Grated zest of one lemon
Preparation:
1. Start by preparing the dough. In a medium bowl, combine the flour, baking powder, cocoa, granulated sugar, and vanilla sugar. Mix the dry ingredients well to ensure they are evenly distributed.
2. Make a well in the center of the dry mixture and add the eggs, oil, and milk. Using a mixer or spatula, mix everything until you obtain a smooth composition. The dough should be creamy and slightly thicker than sour cream.
3. Preheat the oven to 180°C. Prepare a baking tray (about 30x20 cm) by lining it with baking paper or greasing it with butter and sprinkling flour to prevent sticking.
4. Pour half of the dough into the prepared tray, leveling it evenly.
5. In another bowl, prepare the cheese filling. Mix the cottage cheese with sugar, the two eggs, vanilla sugar, and grated lemon zest. Use a fork or hand mixer to achieve a slightly grainy but well-integrated composition.
6. Pour the cheese filling over the first layer of dough, making sure it is evenly distributed.
7. Add the remaining dough on top of the filling, completely covering the cheese. You can use a spatula to level the dough, but it doesn't need to be perfect, as it will bake and become fluffy.
8. Place the tray in the preheated oven and bake for 40 minutes or until the cake is golden and a tester inserted in the middle comes out clean.
9. After baking, let the cake cool in the tray for 10 minutes, then transfer it to a cooling rack to cool completely.
Serving suggestions:
The cheesecake with vanilla can be served plain, dusted with powdered sugar, or alongside a berry sauce for a contrast of flavors. You can also add a serving of fresh whipped cream or ice cream for an even more decadent dessert.
Possible variations:
To diversify the recipe, you can replace the cottage cheese with ricotta or mascarpone, and for a more intense flavor, add a few drops of almond extract to the filling. You can also incorporate some dark chocolate pieces or dried fruits into the dough for an extra touch of flavor.
This cheesecake with vanilla is not only easy to prepare but also a delight that will bring smiles to the faces of your loved ones. Enjoy!
