Ingredients:
- 25 g fresh yeast
- 1 tablespoon sugar
- 250 ml warm milk (not hot, to avoid killing the yeast)
- 500 g flour
- 100 g sugar (plus 2 tablespoons for decoration)
- 100 g melted butter
- 1 egg
- 1/2 teaspoon salt
- 150 g roasted and chopped nuts
- 1 teaspoon vanilla essence (optional for extra flavor)
Step 1: Activating the yeast
To start, mix the yeast with 1 tablespoon of sugar and warm milk in a bowl. Let the mixture sit for 5-10 minutes until it doubles in volume and forms a fluffy foam. This step is essential, as active yeast is the key to achieving fluffy rolls.
Step 2: Preparing the dough
In another bowl, combine the remaining sugar (100 g) with melted butter, egg, salt, and vanilla essence. Mix well until the mixture becomes homogeneous. Add the yeast mixture and mix again. Start gradually incorporating the flour, one cup at a time, until the dough becomes soft and easy to work with. It's important not to add all the flour at once to avoid a dense dough.
Step 3: Kneading
On a floured surface, knead the dough for 5-10 minutes. The dough should become elastic and not stick to your hands. If it's too sticky, you can add a little more flour, but be careful not to overdo it, as this can affect the texture of the rolls.
Step 4: Rising
Shape the dough into a ball and place it in a bowl greased with a little oil. Cover it with a clean towel and let it rise in a warm place, away from drafts, for about 30-40 minutes, until it doubles in volume.
Step 5: Shaping the rolls
After rising, take the dough and divide it into 12 equal pieces. Shape each piece into a ball and then gently flatten it. Sprinkle the chopped nuts on each roll and fold the dough so that the nuts are inside. You can shape them into various forms or braid them for a more attractive appearance.
Step 6: Baking
Place the rolls on a baking tray lined with parchment paper, leaving enough space between them to expand. Cover them with a towel and let them rise for another 15-20 minutes. Meanwhile, preheat the oven to 180°C. Once they have risen slightly, sprinkle the two tablespoons of sugar on top and bake for 20-25 minutes or until golden brown.
Step 7: Serving
Once the rolls are ready, remove them from the oven and let them cool on a rack. They are delicious both warm and at room temperature. You can serve them plain or with a warm chocolate sauce for an extra treat.
