Step by step for Moldovan 'mucenici'
1. Activating the yeast:
Start by dissolving the yeast in a little warm water. Stir gently until the yeast is completely dissolved. This step is essential to activate the yeast, which will make the dough rise fluffy.
2. Preparing the dough:
In a large bowl, place the flour and make a small well in the center. Pour the activated yeast into this well, then add the sugar, warm water, the two eggs, and the salt. Mix the ingredients well with a spatula or your hands, then knead the dough until it becomes elastic and easily comes off your hands. This is the moment when you can let yourself be carried away by the enticing aromas of the ingredients.
3. Rising the dough:
Cover the bowl with a kitchen towel and let the dough rise in a warm place until it doubles in volume. This can take between 30 minutes to an hour, depending on the room temperature.
4. Shaping the 'mucenici':
After the dough has risen, sprinkle flour on the work surface and turn out the dough. Roll it out gently into a thick sheet. Cut pieces from the dough and roll them into long strips, which you will twist and braid into the shape of an '8' or 'infinity'. This shape is traditional and symbolizes immortality.
5. Second rising:
Place the 'mucenici' on a baking tray lined with parchment paper, leaving space between them. Let them rise again for 10 minutes, then brush them with beaten egg for a golden and shiny crust.
6. Baking:
Preheat the oven to low heat (about 180°C) and bake the 'mucenici' for 15-20 minutes or until golden. It's time to enjoy the wonderful aroma that spreads throughout the house!
7. Preparing the syrup:
While the 'mucenici' are baking, you can prepare the syrup. In a pot, add 1 liter of water, 8 tablespoons of sugar, and the zest of the orange and lemon. You can also add vanilla sugar or the vanilla pod for extra flavor. Boil the syrup for 10 minutes, then let it cool.
8. Soaking the 'mucenici':
After the 'mucenici' are ready, take them out of the oven and remove the parchment paper. You can soak them immediately with the aromatic syrup, making sure each 'mucenic' absorbs the liquid well.
9. Final decoration:
After they have cooled, brush the 'mucenici' with honey and sprinkle ground walnuts on top, along with a little grated lemon zest for a fresh taste. The 'mucenici' are now ready to be enjoyed!
Tips and tricks
- Yeast: Make sure the yeast is fresh to achieve a fluffy dough. If using dry yeast, it's good to follow the instructions on the package.
- Flour: Type 00 flour is ideal for a fine dough, but you can also use regular flour, depending on your preferences.
- Rising time: Using a warm oven to rise the dough can speed up the process. A bottle of warm water near the dough can create a moist and warm environment for optimal rising.
- Variations: You can add flavors like cinnamon or cardamom to the dough for a personal touch. Also, substitute some of the ground walnuts with hazelnuts or pistachios for a different texture.
Delicious combinations
'Mucenici' pair perfectly with a cup of aromatic tea or a glass of sweet wine. You can try serving them alongside a portion of Greek yogurt with honey, thus adding a tasty contrast between sweet and sour.
Nutritional benefits
These 'mucenici' provide a good source of carbohydrates from flour, sugar, and honey, which will give you energy throughout the day. The ground walnuts add healthy fats, proteins, and fiber, contributing to a balanced diet.
