- 1 teaspoon dried thyme
- 1 teaspoon dried marjoram
- 1 teaspoon dried oregano
- Salt and pepper to taste

Instructions

Step 1: Preparing the ingredients
Start by washing the potatoes and eggplants well. Cut the potatoes into slices about 0.5 cm thick. Use a sharp knife to make even cuts, which will help with even cooking. If using fresh eggplants, partially peel them (zebra style) to reduce bitterness. Cut them into slices similar to the potatoes.

Step 2: Sautéing the vegetables
