Pumpkin Pie (Vegan)
Filling preparation method: To start, choose a fresh and juicy pumpkin, peel it and remove the seeds, making sure to eliminate any unsuitable parts. Once you have the cleaned pumpkin, grate it on a large grater so that the pulp becomes fine and easy to prepare. In a pot, melt the margarine over medium heat, being careful not to let it burn. Once the margarine has completely melted, add the grated pumpkin and start stirring, allowing it to sauté lightly. It is essential to stir occasionally to prevent sticking and to allow the pumpkin to release its juice. Leave it on the heat until the liquid evaporates completely and the pumpkin becomes soft and fragrant. When ready, remove the pot from the heat and add the cinnamon, mixing well to combine the flavors. Then, let the filling cool.
Dough preparation method: In a large bowl, mix the flour with the baking powder, salt, and sugar, ensuring that the ingredients are well combined. Make a well in the middle of the flour mixture, where you will add the cubed margarine at room temperature and the oil. Start kneading the dough, gradually adding water until it becomes elastic and homogeneous. It is important not to add too much water at once to avoid a too-soft dough. After the dough has gained consistency, wrap it in plastic wrap and place it in the refrigerator for about 30 minutes to firm up a bit.
After the dough has cooled, prepare the baking tray (my tray is 38x26 cm) by lining it with baking paper to prevent sticking. Divide the dough into two equal parts, then roll out the first sheet on a floured surface. This sheet should be large enough to cover the bottom of the tray, then carefully place it in the tray. Sprinkle breadcrumbs over the entire surface of the sheet to absorb moisture from the pumpkin filling. Then add the pumpkin mixture, smoothing it out with a spatula, and sprinkle breadcrumbs on top again. Roll out the last sheet of dough, which you delicately place over the pumpkin filling, making sure to tear it in places to form small 'clouds' that will give the pie a rustic appearance.
Finally, place the pie in the preheated oven and let it bake at a moderate heat until it turns golden and browned, releasing delicious aromas of pumpkin and cinnamon that will fill the entire room with an inviting scent.
