Introduction:
Coq au Vin is a classic recipe from traditional cuisine, dating back to ancient times. It is said that this dish was originally cooked for soldiers stopping at peasant households, where poultry was quickly prepared with wine and fresh vegetables. Over time, Coq au Vin has become a symbol of culinary art, appreciated by chefs everywhere. The recipe I will share with you is my favorite version, specially adapted to achieve more tender and flavorful meat.
Ingredients:
- 3 large pieces of chicken (preferably pre-cut)
- 500-700 ml semi-dry white wine (for a more delicate flavor)
- 50 ml oil
- Salt and pepper, to taste
- 1 teaspoon paprika
- 1 tablespoon dried thyme, crushed
- A few bay leaves
- A few small, firm potatoes
- 1 small onion (shallot) or one large onion, cut into quarters
- A few small spring carrots
- 300 g champignon mushrooms, sliced
- A handful of green beans (optional)
- A few cloves of garlic, chopped
- 2 large slices of ham, cut into squares
- 1 tablespoon flour
- 1 tablespoon butter
- 50 ml oil
Ingredient Tips:
- Chicken: Choose quality chicken pieces, preferably from a trusted supplier. If you prefer, you can substitute chicken with hen, and the taste will be just as delicious.
- Wine: Semi-dry white wine adds a slightly fruity taste and helps tenderize the meat. Make sure to use a wine you would be willing to drink.
- Vegetables: Using seasonal vegetables brings a unique freshness to the dish. Experiment with vegetables from your garden or from the market.
Preparation:
1. Marinating the meat: Start by marinating the chicken pieces in the semi-dry white wine for at least 12 hours. This will help tenderize the meat and intensify the flavors. Ideally, let the meat sit in the refrigerator overnight.
2. Browning the meat: After marinating, remove the chicken from the wine and pat it dry with a paper towel. This will help achieve a nice crust. In a large skillet, heat 50 ml of oil and one tablespoon of butter. Sauté the chicken pieces on all sides until golden.
3. Cooking the meat: Transfer the browned chicken to a baking dish or another oven-safe container. Add the remaining wine marinade, which will enrich the dish's flavor. Cover the dish and place it in the oven at 180°C for 30 minutes.
4. Adding the vegetables: After 30 minutes, check the meat. If it is still tough, add 300 ml of hot water to assist in cooking. After another 30 minutes, add the vegetables (potatoes, carrots, mushrooms, green beans) and the cut ham. Sprinkle with salt, pepper, and thyme, then add a few cloves of garlic for extra flavor.
5. Finishing the dish: Cover the dish again and let it simmer in the oven for 45 minutes or until the meat is tender and the vegetables are cooked. The house will be filled with appetizing aromas, and you will be eager to enjoy this culinary feast.
6. Serving: Coq au Vin is usually served with freshly baked bread or rice. A simple green salad will perfectly complement the meal.
Variations:
- Experiment with spices by adding a few peppercorns or rosemary.
- For a vegetarian version, substitute the meat with tofu or seitan.
Nutritional Benefits:
This recipe is rich in protein due to the meat and contains a variety of vegetables, providing essential vitamins and fiber. The white wine added during cooking brings antioxidants that can be beneficial for health.
Frequently Asked Questions:

Ingredients: 3 large pieces of coconut (I buy pre-cut pieces, I think especially for this recipe) which I let marinate in the fridge for at least 12 hours with 500-700 ml of semi-dry white wine, 50 ml of oil, salt, pepper, a teaspoon of paprika, and a tablespoon of crushed dried thyme. Besides these, we also need: a few bay leaves, dried thyme, some firm small potatoes that won't crumble in the oven, a small shallot or a larger onion cut into quarters, a few small spring carrots, 300 grams of champignon mushrooms, a handful of green beans I added, a few cloves of garlic, 2 large slices of ham cut into larger squares (you can replace it with kaiser), salt and pepper to taste, a tablespoon of flour and a tablespoon of butter, 50 ml of oil. I did not add fancy spices or other aromatic herbs; I respected the traditional recipe in this regard.
