Total time: 1 hour

When it comes to cakes, few can match the pleasure of a fluffy plum cake. This simple and delicious dessert was inspired by our friend, Eugenia Munteanu, who delighted us with her recipes from Alba Iulia. Today, I will present a version adapted for a smaller pan, perfect for satisfying your sweet cravings without filling the kitchen with too much cake.

Ingredients

- 500 g plums (or other fruits like apricots or peaches)
- 2 cups of flour
- 150 g margarine (or butter, if you prefer)
- 1 egg
- 3 tablespoons of sugar
- 2 tablespoons of sour cream
- 2 tablespoons of semolina or breadcrumbs
- 1 packet of baking powder
- 1 sachet of vanilla sugar
- Grated zest of one lemon
- 1 teaspoon (or more, to taste) of cinnamon

Necessary utensils

- A 20/30 cm baking pan
- Parchment paper
- A large mixing bowl
- A whisk or spatula
- A knife and cutting board for the plums

A brief history

Fruit cakes have a long-standing tradition, rooted in European cuisine, where fresh fruits were used to add moisture and flavor to desserts. This plum cake is a perfect example of how simple ingredients can create a flavorful dessert.

Preparation instructions

1. Preheat the oven: Start by preheating the oven to 160 degrees Celsius. This step is essential to ensure even baking of the cake.

2. Prepare the plums: Wash the plums well, remove the pits, and cut them into quarters. Make sure to choose ripe but firm fruits to achieve the best texture. If you don't have plums on hand, feel free to use apricots or peaches, which will provide a delicious flavor.

3. Prepare the dough: In a large bowl, add one cup of flour and the diced margarine. Using your fingers, rub the flour with the margarine until you achieve a sandy texture. This step is crucial for ensuring a fluffy cake.

4. Add the wet ingredients: To the flour and margarine mixture, add the remaining flour mixed with baking powder, the egg, the 3 tablespoons of sugar, sour cream, vanilla sugar, lemon zest, and cinnamon. Mix everything well until you have a smooth batter.

5. Divide the dough: Split the dough into two equal parts. This will be the base and the top of your cake.

6. Place the dough in the pan: Roll out the first part of the dough on a lightly floured surface and place it in the parchment-lined baking pan. Sprinkle the 2 tablespoons of semolina or breadcrumbs to absorb the moisture from the fruits.

7. Add the plums: Arrange the quartered plums cut-side down over the dough in the pan. This will allow the juices from the fruit to soak into the batter, giving it a wonderful flavor.

8. Sprinkle sugar and cinnamon: Evenly distribute 2-3 tablespoons of sugar and a teaspoon of cinnamon over the plums to enhance their flavor.

9. Cover with the remaining dough: Roll out the other part of the dough and place it over the layers of plums. Make sure to cover the fruits well to prevent them from drying out during baking.

10. Bake the cake: Place the pan in the preheated oven and let it bake for 40-50 minutes. The cake is ready when it is golden brown and a toothpick inserted in the center comes out clean.

11. Cool and serve: Once the cake is baked, remove it from the oven and let it cool in the pan. Once cooled, dust it with powdered sugar for an elegant touch. Slice the cake and enjoy it with a cup of tea or coffee.

Practical tips

- For a more intense flavor: You can add some chopped nuts or almonds to the batter for a delicious crunch.
- Fruit challenge: Experiment with other seasonal fruits, such as raspberries or blackberries, to vary the flavors of the cake.
- Storage: The cake keeps well in the fridge in an airtight container for 2-3 days.

Nutritional benefits

Plums are rich in vitamins A, C, and K, making them an excellent source of antioxidants. This cake is not only delicious but also a pleasant way to incorporate fruits into your diet.
