Rustic Mushroom Quiche - A Rustic Delicacy at Every Meal

When it comes to cooking, there are recipes that remind us of family meals, moments of joy, and the warmth of home. The rustic mushroom quiche is one of those recipes, blending tradition with simple and tasty ingredients. In this recipe, we chose to add a touch of originality by using crumbled sheep's cheese instead of cheese, thus adding a unique flavor note. Whether you serve it for lunch, dinner, or even as an appetizer at a party, this quiche will surely please everyone.

Preparation time: 20 minutes
Baking time: 30 minutes
Total time: 50 minutes
Number of servings: 6-8 servings

Ingredients:

- 1/2 package of puff pastry (I recommend the Bella brand for optimal results)
- 15-20 champignon mushrooms (choose larger mushrooms for better texture)
- 3 green onions
- 1 bunch of fresh dill
- 150 g crumbled sheep's cheese (or grated cheese, according to preference)
- 3 large eggs
- 3 tablespoons of sour cream
- 3 tablespoons of olive oil
- 3 tablespoons of water
- Salt and pepper to taste

Preparation:

1. Preparing the dough
Thaw the puff pastry according to the instructions on the package. Choose a square or round baking dish, greasing it with butter to prevent sticking. Place the pastry in the dish, ensuring it fits perfectly. Using a fork, prick the pastry in several places to allow steam to escape during baking.

2. Pre-baking the dough
Cover the pastry with aluminum foil and add a few beans (to prevent puffing) and place the dish in the preheated oven at 180°C for 10 minutes. This step is essential for achieving a crispy crust.

3. Preparing the filling
While the pastry is baking, wash the onions and mushrooms well, chopping them finely. Heat 3 tablespoons of olive oil and 3 tablespoons of water in a pan. Add the onion and sauté until it becomes translucent. Then, add the mushrooms and let them cook until all the liquid evaporates. Finally, season with salt, pepper, and add the finely chopped dill. Let the filling cool slightly so it doesn't affect the pastry.

4. Assembling the quiche
Remove the dish from the oven and remove the foil with beans. Pour the mushroom and onion filling into the pre-baked pastry, spreading it evenly. Sprinkle the crumbled cheese or grated cheese on top.

5. Preparing the egg mixture
In a bowl, beat the 3 eggs with a pinch of salt and add the sour cream, mixing well. Pour this mixture over the filling in the dish, ensuring it distributes evenly.

6. Decorating the quiche
From the remaining pastry, you can cut thin strips to place over the quiche, forming a decorative pattern. This detail will not only enhance the appearance but will also add a crispy texture.

7. Baking the quiche
Place the dish back in the preheated oven at 180°C and let it bake for 20-30 minutes or until the quiche is golden on top and the filling is well set.

8. Serving
Once ready, remove the quiche from the oven and let it cool for 10 minutes. Then, remove it from the dish and cut it into portions. It can be served warm or at room temperature, and for an extra touch of flavor, you can accompany it with a fresh green salad or a yogurt sauce with dill.

Practical tips:

- Choose fresh, quality mushrooms to achieve a tasty filling. You can also use shiitake or portobello mushrooms for a more intense flavor.
- If you want to try a vegetarian version, you can add vegetables such as spinach or zucchini to the filling.
- The quiche is an excellent choice for family meals, as well as for picnics. It can be prepared in advance and reheated before serving.

Nutritional benefits:

This recipe is rich in nutrients, providing protein from eggs and cheese, fiber from mushrooms and onions, as well as healthy fats from olive oil. Additionally, dill adds not only flavor but also essential vitamins and minerals.
