Peaches
Peach cookies are a traditional Romanian dessert, loved by everyone, especially during the holiday season when tables are filled with goodies. These delicious pastries not only look superb but also have an irresistible taste, thanks to the combination of fluffy dough and chocolate cream. Let's see step by step how we can prepare these delights.
We start with the dough. The first step is to take a large bowl, in which we will mix the eggs with sugar, vanilla sugar, and a pinch of salt. Mix well until the mixture becomes homogeneous and frothy, which will give our cookies an airy texture. Next, we will add the ammonia, which must be quenched beforehand with a little vinegar, and the oil, which we will pour in a thin stream while continuously mixing. This will contribute to the juiciness of the dough.
After obtaining a uniform mixture, we gradually start incorporating the flour, mixing until we achieve a dough that is just the right firmness. It should not be too soft, but also not too hard. Once the dough is ready, we let it rest for a quarter of an hour. After this period, we start forming small balls the size of a smaller walnut, approximately 10 grams each. We place them on a baking tray lined with parchment paper, taking care to leave space between them, as they will rise in the oven. The tray is placed in the preheated oven at 180 degrees Celsius and baked for 15-20 minutes until lightly golden. Once cooled, we gently hollow them out with a knife.
For the delicious cream, we start by mixing cocoa powder with sugar in a small saucepan, then adding water and egg yolks. We mix well with a whisk, then place the saucepan over low heat, allowing it to boil until the mixture thickens to a consistency similar to sour cream. After obtaining the cream, we let it cool. Meanwhile, we whip the butter until fluffy, then gradually start adding the cooled cocoa cream. Finally, we add half of the hollowed-out filling from the peach cookies and the rum essence, mixing again to obtain a fine and aromatic cream.
Assembling the peach cookies is the fun part. We take each ball, fill it with chocolate cream, and join them in pairs. To give an attractive appearance, the green dye is dissolved in a small bowl with 100 ml of Fanta, while the red dye is prepared in another small bowl. Then, we take each peach cookie, dip half in the green color and the other half in the red color, then roll it in granulated sugar to add a touch of sparkle. Finally, we decorate with tangerine leaves for a special look. These peach cookies will not be missing from any celebration and will surely delight everyone who tastes them.
Ingredients: Dough: 3 eggs, 250 g powdered sugar, flour as needed (about 600 g), 150 ml oil, 2 packets of vanilla sugar, 1 packet of ammonia, a pinch of salt. Cream: 1 package of butter (82% fat), 30 g cocoa, 3 egg yolks, 150 g sugar, 100 ml water, rum essence (to taste), half of the pit from the peaches. Decoration: green food coloring, red food coloring, granulated sugar, 200 ml Fanta, mandarin leaves.
