2. Preparing the dough:
In a large bowl, place the remaining flour (about 498 g) and add the salt, sugar, oil, and caraway. Mix the dry ingredients to combine them evenly. Then, add the activated starter and warm water. Use a spatula or your hands to mix until the dough begins to form.
3. Kneading:
Transfer the dough to a clean, floured surface. Knead the dough for about 8-10 minutes until it becomes elastic and smooth. If it's too sticky, you can add a little more flour, but be careful not to overdo it.
4. Shaping the cococi:
Divide the dough into 8 equal pieces. Shape each piece into a ball and gently flatten it to obtain a round shape, about 1-1.5 cm thick. You can use a rolling pin to achieve an even shape.
5. Baking:
Preheat the oven to 200°C. Place the cococi on a baking tray lined with parchment paper. Bake for 20-25 minutes or until they turn golden and sound hollow when lightly tapped on the bottom.
6. Serving:
Let the cococi cool on a rack for a few minutes. Serve them warm, alongside butter or fresh cheese. This quick bread can also be used as a base for delicious sandwiches.
