Rice - Risotto with Smoked Cheese (Scamorza) and Rosemary
To prepare a delicious and aromatic risotto, start by sautéing the onion in olive oil or butter until it becomes translucent and releases its flavors. This will be the base of your dish's taste. As soon as the onion is ready, add the rice, preferably a special risotto rice such as Arborio or Carnaroli. Stir the rice well with the onion so that each grain is coated in fat. Continue to sauté the rice until it becomes slightly transparent, about 2-3 minutes.
Once the rice has taken on a shiny hue, add a glass of dry white wine. It is essential to choose a quality wine, as it will significantly influence the final flavor of the dish. Let the wine boil, stirring constantly, until the alcohol completely evaporates and the aroma becomes pleasant and elegant. If you do not have a wine that you consider good, it is better to skip this step to avoid an unpleasant taste.
Now it's time to start adding hot broth, one ladle at a time, stirring constantly. It is important not to add all the broth at once, but gradually, allowing the rice to absorb the liquid before adding more. This technique will help the rice become creamy and maintain its perfect texture. Continue to stir and add broth until the rice becomes al dente, which should take between 17 and 19 minutes.
After about 15 minutes, when the rice is almost ready, add a few sprigs of freshly chopped rosemary. Be careful not to add too much, as its flavor is quite strong and can dominate the dish. Finally, add cubes of smoked cheese, which will add a rich flavor and a smoky note to your risotto. Stir well to allow the cheese to melt evenly, creating a creamy texture.
Once you have achieved the desired consistency, remove the pot from the heat and let the risotto rest for a few minutes. This step is crucial as it allows the flavors to meld. Serve the risotto warm, sprinkled with a little fresh rosemary and, if desired, with some strips of smoked cheese on top for a pleasing appearance and enhanced aroma. You can accompany this dish with a fresh green salad or grilled vegetables for a delicious and balanced lunch or dinner. Enjoy every bite!
