- 1 bay leaf
- Dried thyme, enough to pinch between two fingers
- Salt and pepper, to taste
- 2 cubes of vegetable borscht concentrate (or natural borscht, as preferred)
- 2 eggs
- 400 ml milk
- 1 tablespoon vinegar (to give freshness to the soup)
### Preparation steps:
1. Preparing the meat: Cut the pork into larger pieces, about 3-4 cm. This will allow the pieces to remain tender and juicy. Heat 3-4 tablespoons of oil in a large 4-liter pot.
2. Sautéing the vegetables: Add the meat to the pot and sauté until it lightly browns on all sides. This step will intensify the flavors. Then, add the chopped onion, grated carrots, and grated celery. Sauté the vegetables with the meat until softened, about 5-7 minutes.
3. Adding the liquid: Pour hot water over the meat and vegetables, enough to cover them. Add the bay leaf and thyme. Cover the pot and let it simmer on low heat for 30-40 minutes, until the meat is tender.
4. Including the rice: Once the meat is cooked, add the washed rice and stir. Season with salt and pepper to taste. Let it boil for 10 minutes, stirring occasionally to prevent the rice from sticking to the bottom of the pot.
5. Final flavoring: After 10 minutes, add the borscht, adjusting the amount according to your preference for desired acidity. Beat the eggs lightly and add them to the soup, stirring quickly to avoid lumps.
6. Finishing the soup: In a separate bowl, mix the egg yolks with a tablespoon of vinegar and 400 ml of milk. Pour the mixture into the pot, stirring constantly. Let it come to a boil for 2-3 minutes, then turn off the heat. Don’t forget to remove the bay leaf before serving.
