Caramelized Plums on a Bed of Brie
To prepare a refined and delicious appetizer, we start with fresh and aromatic ingredients. The plums, autumn fruits full of flavor, must be well-selected. Therefore, we choose ripe but firm plums to ensure they will caramelize perfectly. The plums are washed under a stream of cold water to remove any impurities. Then, with a sharp knife, the plums are cut in half, taking care to remove the pits without damaging the flesh. Once the pits are removed, each half of the plum is cut into thin fan-shaped slices, which will look spectacular on the plate.
In a non-stick pan, fresh orange juice is added, which will bring a note of freshness and a splash of pleasant acidity. Over this juice, brown sugar is added, which will contribute to the caramelization of the fruits, giving them a golden hue and a sweet taste. The mixture is heated over medium heat, stirring gently to dissolve the sugar, until it begins to simmer lightly. After obtaining a fragrant syrup, the sliced plums are added, mixing carefully to coat them evenly in the sweet syrup.
The plums are sautéed in the pan, turning them only once to caramelize evenly, being careful not to leave them on the heat too long, as they can become too soft. Once the plums are caramelized, they are set aside to cool, and the aroma of orange and sugar will fill the kitchen with an irresistible scent.
Meanwhile, the brie cheese is taken out of the refrigerator, and a cap of about 1-2 cm is removed from the top, which can be used later in other dishes. The caramelized plums are arranged on top of the cheese, creating an attractive and tempting appearance. Now, the brie cheese is placed in a heat-resistant glass dish and put into the preheated oven at a high temperature. It is important to keep an eye on the cheese while baking, as the time may vary; usually, 15 minutes is enough until the cheese becomes soft and slightly melted.
After being taken out of the oven, the cheese is allowed to cool slightly in the dish, and then a sprinkle of sea salt and a few fresh rosemary leaves are added on top, which will add a pleasant contrast of flavors. It is transferred to a serving platter, and the appetizer is ready to be enjoyed. This combination of soft cheese with caramelized plums and orange flavor is a true delight, perfect for impressing guests, especially those who are fond of fine cheeses. Enjoy your meal!
