If you are looking for a delicious and healthy recipe that will impress both family and friends, then chicken breast rolls with zucchini are the perfect choice. This recipe is not only full of flavors, but it is also a wonderful combination of textures that will make you fall in love with every bite. The rolls are filled with fresh vegetables and hard-boiled eggs, all wrapped in juicy chicken breast. Here’s how you can prepare them step by step!

Preparation time: 30 minutes
Baking time: 90 minutes
Total time: 2 hours
Number of servings: 6

Ingredients

- 2 boneless chicken breasts
- 1-2 zucchinis
- 1 carrot
- 50 g celery
- 2 tomatoes
- 1 onion
- A few cloves of garlic
- 50 g cheese
- A few sprigs of dill and parsley
- 1 tablespoon ketchup
- 2 tablespoons vinegar
- 100 g spinach or/or lamb's lettuce
- 2 eggs
- 2-3 tablespoons olive oil
- Salt, pepper, chicken spices

Instructions

1. Preparing the chicken breast:
Start by cutting the chicken breast from the middle towards the edges, unfolding it like a thicker sheet. In the meantime, prepare a wooden board and lightly grease it with a few drops of olive oil. Use a meat hammer to pound the chicken breast, being careful not to crush it too hard. Ideally, you should achieve a shape of approximately 25 x 15 cm.

2. Preparing the aluminum foil:
Take a piece of aluminum foil measuring 40 x 40 cm (you can use two pieces) and grease it well with 1 tablespoon of olive oil. Place the pieces of chicken overlapping slightly in the middle, where the thinner end of the breast is. Generously season with salt, pepper, and spread ketchup.

3. Adding the filling:
On the meat, place thin sticks of carrot and cheese, alternating. Sauté the celery and diced tomato in the remaining olive oil. Blanch the spinach and/or lamb's lettuce leaves, and hard-boil the eggs, peeling them afterward. Evenly distribute the celery and tomato mixture over the entire surface of the meat. Place the spinach on one long side of the roll, and the boiled eggs cut into quarters, one on top of the other, over the spinach.

4. Rolling:
Start rolling from the side where the spinach is, gently lifting the foil to help form the roll. Continue to roll until you reach the other end, pressing gently with your hands to seal it well. Wrap the roll in foil, tightening the ends well. You can choose to wrap the roll in another piece of foil for extra protection.

5. Preparing the vegetables and the baking dish:
Peel the zucchinis and remove the seeds, then cut them into sticks about 7-8 cm long. Place the roll in a longer baking dish. Next to it, add slices of onion, zucchini sticks, slices of tomato, and unpeeled garlic cloves, crushed with the flat side of a knife. Add a few sprigs of greens, 1 teaspoon of salt, vinegar, and water until it reaches 3/4 of the height of the roll.

6. Baking:
Place the dish in the preheated oven on low heat for 60 minutes. After this time, remove the dish and, using a spatula, turn the roll over to the other side. Return to the oven, this time on medium heat, for 30-40 minutes. Be careful not to let the juice evaporate completely; if necessary, add more water.

7. Finishing and serving:
When the roll is ready, remove it onto a wooden board and let it cool for 5-10 minutes. Cut the roll into longer pieces, removing the foil. You can also cut slices about 2-3 cm thick. Arrange the pieces on a platter and decorate them with the surrounding vegetables, adding a few tablespoons of the remaining sauce from the dish. Offer a touch of freshness with dill and parsley leaves.

Chef's tip:
For an even more intense flavor, you can add extra spices like paprika or oregano to the filling mixture. Also, feel free to experiment with different types of cheese or vegetables, adjusting the recipe according to your preferences.

Calories and Nutritional Benefits:
This recipe is not only tasty but also healthy. Chicken breast is an excellent source of lean protein, while the vegetables add essential fiber and vitamins. Approximately, a serving contains about 300-350 calories, depending on the ingredients used.

Frequently Asked Questions:

1. Can I use turkey instead of chicken?

3. What side dish goes best with it?
