Baked Pork with Sauerkraut

 Ingredients: 1 rat 1 large onion 1 pickled cabbage of 1.5 kg. 1 fresh cabbage of 2 kg. 2 medium carrots 1 tsp ground black pepper 1 tsp thyme 1 tsp sweet paprika 1 bay leaf 1 cup of 300 ml tomato juice 1 cup of boiled or still water 1 bunch of fresh parsley oil for sautéing the cabbage

To prepare this delicious cabbage and duck recipe, start by ensuring that you have all the necessary ingredients on hand to facilitate your cooking process. You will need noodles, pickled cabbage, fresh cabbage, carrots, onion, bay leaves, parsley, oil, salt, black pepper, paprika, and thyme.

The first step is to cut the pickled cabbage noodles into suitable pieces. In a large skillet, heat a little oil over high heat and add the pickled cabbage. Cover the skillet with a lid and let it sauté for 20 minutes, stirring occasionally every 4 minutes to ensure it cooks evenly and does not burn. This sautéing will intensify the flavors of the cabbage and add a pleasant texture to the dish.

At the same time, take another pan or a cauldron and add a little oil. Start to sauté the fresh cabbage, cut into strips, until it significantly reduces in volume. This process will help to remove bitterness and make the cabbage softer and more flavorful.

Once you have prepared both types of cabbage, take a baking dish and mix the pickled cabbage with the fresh one. Add the sliced carrots, thinly sliced onion, bay leaf broken into small pieces, finely chopped parsley, as well as tomato juice and water. Season with ground black pepper, paprika, and thyme, mixing well to combine the flavors.

After the cabbage mixture is uniform, place the portions of duck on top, ensuring they are well oiled and sprinkled with salt. Cover the meat with the layer of cabbage and prepare the dish for the oven.

Preheat the oven to 220 degrees Celsius, equivalent to setting 5-6 on gas ovens. Place the dish in the oven and let it bake for one hour. After this interval, remove the dish from the oven and uncover it, allowing the meat to brown slightly under direct heat. Adjust the oven temperature to 180 degrees Celsius (setting 4 on gas ovens) and let the dish bake for another 20 minutes. Check if you need to add a little water to the cabbage, depending on how your oven bakes.

In the end, you will get a delicious dish, with tender and juicy meat wrapped in the flavors of cabbage and spices. Serve this main course with a fresh salad or warm polenta. Enjoy your meal!
